Wrap Back

How do I cut 40 yards of fabric in half and wrap it back up neatly on the bolt?
I bought 40 yards of organza fabric to use for my wedding. It's currently all nice and secure on the bolt. However, the fabric is too wide so I need to cut it in half. I have this great idea of just starting at the beginning and walking through it with scissors. However, I can't think of a neat way to get it back neatly on the bolt. Anyone have any ideas? Thanks.
Unroll the bolt a little at a time, opening up the fabric so you can cut it on the crease. Then, fold what you have already cut so you can unroll some more. When you're done, you can roll them back onto the bolt as they are, or separate the two halves and then roll them onto the bolt, one after the other.
If there is no crease or if it is uneven, use quilter's rulers and a rotary cutter to get an even cut. You can form a sideways "T" with your rulers to get it exact.
